| Description of Initiative | Programme Outcome Statement The outcome of this programme will be a suite of novel procedures and technologies that will enable the customization of food organoleptic properties that are aligned to market requirements and support the science capability for New Zealand’s food industries. This programme targets the Government’s innovative foods portfolio' and builds on existing understanding to develop new knowledge of (a) the mechanisms underlying the organoleptic properties of food, (b) methods to manipulate those properties, and (c) quantifying those relationships in the forms of models and design information usable by New Zealand food producers, processors and processing equipment manufacturers. This will provide the tools and techniques that will create a platform on which new and novel products can be created. Programme Summary New concepts and processing technologies will be developed through this programme to perfect the sensation properties of food. The programme will identify mechanisms by which the functional properties of proteins can be modified and tailor these outcomes towards commercial opportunities, optimise food manufacturing processes, and modulate food flavour genesis. These advances will identify novel procedures and technologies that can be targeted for the creation of new product opportunities. |
