| Description of Initiative | Programme Outcome Statement This programme addresses the spectrum of milk protein properties and functionality, from detailed molecular structure and dynamics of individual milk protein molecules through to macroscopic properties that impact physical and biological function, with a view to filing important gaps in our knowledge. This work will extend an existing platform of underpinning knowledge that has a track record of enabling and facilitating novel product development, and industry problem solving. The knowledge generated in this work will feed into a wide range of new product developments and product and process improvements that will be funded and carried out by Fonterra and its subsidiaries. The programme addresses the investment signals and priorities relating to development and use of added value food and food ingredients. When achieved, this outcome will make a significant contribution to increases in export revenues of food products and will underpin other research on aspects of food production. Programme Summary The knowledge generated in this work will lead to products that embody this knowledge and so leverage the high value proteins to give increased earnings for New Zealand. Because this is true underpinning research, most outcomes will be diffuse and widely distributed, nevertheless some specific new functional and nutritional product concepts will be generated. Because project staff are also involved in product development projects, there is rapid and continuous uptake of new learnings into product development. |
